Spicy Pickled Carrots

Vegan and Gluten-Free

Ingredients

4 Medium Carrots, peeled and sliced into ¼ inch coins

2 jalapeno peppers, sliced

4 large garlic cloves, slightly smashed

½ small yellow onion, julienne

6 black peppercorns

1/3 cup apple cider vinegar

1/3 cup distilled white vinegar

1 ½ cups water

1 ½ tbsp. salt

¾ tsp. sugar

¾ tsp. ground cumin


Procedure

In a large non-reactive jar with a lid, add the carrots, jalapeno, garlic cloves, and onion. Set aside. In a small saucepan, combine the remaining ingredients and bring to a rolling boil. Carefully pour the liquid into the jar, making sure everything is covered. Put the cover on the jar and let sit on the counter for one hour. Once the hour has passed, open the container and put it into the refrigerator to cool completely.
